Chef savors each season’s bounty

Asked what her favorite fall food is, chef Krista Roslof exclaims, “Apples, 100 percent! I love apples so much, they’re versatile, hopeful and delicious.”

That said, when it comes to produce, there isn’t a season Roslof doesn’t like.

“I love all seasons — each has its jewels,” Roslof says.

The following is her estimation of the best of each season:

n Summer: An abundance of easy, raw foods.

n Autumn: There’s something so cozy about slower cooking processes.

n Winter: Root vegetables and slowly developed flavors, a quietness of technique and appreciating what we have in the pantry.

n Spring (possibly her favorite season): A whole new renewal — fresh greens, smelling the earth and the sunlight and hopefulness.
